Summary
Under directions from the managing director, the branch manager performs professional management and supervisory duties, stock management, sales, quality assurance, maintenance of margins, cleaning procedures and hygiene, staffing recommendations, customer care, documentation of relevant information, preparation of profit and loss statements.
Restraunt Manager Duties And Responsibilities.
Stock Management
* Verification of all stock both closing and opening
* Enter all stock movement into the system
* Personally accountable for deficits in stock (25% – 100% of cost depending on circumstances) based on daily figures, but deducted on a monthly basis across all stocks taken.
Sales
* Responsible for the achievement of set monthly and annual sales targets
* Management and control of accounts receivable and credit sales
* Responsible for bad debts (food not paid for) i.e. this will shall be deducted from your salary 30 days after the end of the customer’s current credit policy deadline.

Quality Assurance
* Responsible for maintaining high standards of excellence and raise our operations minimum score
* Improve on the scores within a specified time frame incase deficiencies are noted
* Responsible for any product at your restaurant found to be below acceptable standards by an authorized inspector. This shall be treated as waste from your stock of which you are responsible

Cleaning
* Maintain a clean work environment with high health and safety standards at all times
Margins
* Maintain monthly actual margins within -2.0% to +1.0% of your calculated theoretical margins
Staffing
* To be present at all times during opening and closure of the restaurant
* Conduct shift meetings with staff at the beginning of each shift
* Conduct weekly staff meetings with all staff
* Prepare and maintain the weekly work schedule for all staff members , including scheduling of leaves at appropriate times in consultation with the HR Manager in Kenya
* Conduct continuous and quarterly performance evaluations for all your staff
* Conduct shift meetings with staff at the beginning of each shift

Customer Care
* Respond to all customer feedback within twenty four (24) hours
Documentation
* Responsible for documenting supplier related issues (one form per incident)
* Fill out at least one employee feedback form per day
* Personally fill out all time sheets for employees. ( done by the manager on duty and not the staff themselves)

Profit and Loss statements
* Work with the Managing Director and Accounts department to set your budgets and manage your costs accordingly.
* Take necessary steps to ensure your restaurant gains profitability

JOB SPECIFICATIONS
Academic Qualifications
* A degree or diploma in hotel management or a related discipline at a recognized institution in Kenya
* Over 2 yrs working experience in the Kenyan hotel industry ( added advantage)

* Good analytical and problem solving skills
* Excellent spoken and written communication skills
* Good quantitative ability for analyzing performance
* Comfort with Microsoft Excel, Word
